Black Carrot Recipe – KANJI
It is an all time favourite herbal drink made with Black Carrots. Come Spring season and Kanji vends can be seen in North India. It is one of the very popular drinks in this part of the Planet Earth. Kanji will taste even better than before after you have read its health benefits.
Ingredients:
- 4 large black carrots (kale gaijar)
- 4 tablespoons mustard seeds, coarsely powdered
- 3 tablespoons salt
- 1/2 tablespoons coarsely ground red chilli powder
METHOD
- Scrub and wash the carrots thoroughly in running water. Peel the carrots and cut into 3-4 cm long thick pieces or fingers.
- Take a large earthen pot (matka) or ceramic jar or Glass jar with a lid and of four litres capacity.
- Fill the jar (or earthen pot) with water. Add carrots, mustard powder, salt and red chilli powder and stir it well.
- Cover the mouth of the pot with a muslin cloth and tie it around the rim.
- Keep the pot in direct sunlight for three to four days. Bring it indoors at sunset.
- After four days, pour the contents of the jar into a jug and chill in the refrigerator.
Pour into glasses along with the diced carrots. Alternatively serve pieces of the carrots on the side. Serve chilled.
